Blue Stilton cheese and wines

Based on the principle concerning cheese and wine pairing which I posted yesterday, we enjoyed wine and a wonderful blue Stilton cheese which we were given as a Christmas present from friends of ours during a new year vacation.

The Stilton cheese has the high intensity of saltiness, richness and complexity, and it is definitely very nice. The cheese itself is so tasty that it simply goes well with bread. We also tried the cheese with honey and we found the saltiness of the cheese contrasted the sweetness of the honey and they matched well.

Then, we matched the cheese which was recovered to room-temperature, with wine. We paired it with Yalumba Hand picked Shiraz Viognier 2012. The wine is full-bodied, red-fruit dominant, such as raspberry, silky tannin,  elegant style. As the grapes were harvested by hands, the wine is no bitterness and very soft textured. I thought it was like a fine Burgundy wine. If I were a judge at a wine show, I would give it a gold medal. Regarding the matching of the wine and cheese, I can say that it is a good pairing, although it might be the flavour of the cheese is slightly stronger than wine. Wines of the higher intensity of flavour may match the Stilton better than the Yalumba.

Next day, we matched the chilled Stilton cheese with desert wine, Vasse Felix Cane Cut 2012 Semillon. The wine itself lacks crispness, which is an important factor for a good desert wine; however, it matched the Stilton so well.

My wife has a different opinion. She thinks the Yalumba matched the Stilton better than the Vasse Felix.

We found that desert wines match chilled blue cheeses well and full-bodied red wines go well with blue cheeses with room-temperature.

Wine and cheese

The Wine and cheese are good pairing. The principle of pairing cheeses with wines is as follows:

Soft cheeses
Soft cheeses such as Brie, Camembert and sheep cheese are more lightly textured, and can be paired with sparkling wines,  aromatic white wines and light- to medium- bodied high acid wine. Creamier, richer cheeses may require more weighty and complex wines; alternatively more acid wines also match such creamier cheese well.

Semi-hard and hard cheeses
The aromas and textures of semi-hard and hard cheeses, such as Cheddar, Comte and Manchego and Parmigiano reggiano match sparkling wines medium- to full- bodied white wines and older red wines.

Blue cheeses
The powerful, complex, salty and often pungent aromas of blue cheeses, e.g. Gorgonzola, Roquefort and Stilton, require strongly flavoured, complex wines. Sweet wines and fortified wines generally match chilled blue cheeses well.  Full-bodied red wines go well with blue cheeses with room-temperature.

Local wine and the local cheeses
Basically local wines match the local cheeses regardless of the above three principles.

Clare Valley No.3 - Soil

Today, I want to say about soils in Clare Valley.

What are good soils for growing grapes?

Grapevine grows the best when its requirements for nutrients and moisture are fully met. In general the soils that have the following four attributes are considered to meet the requirements:

  • have sufficient depth (soil permeability);
  • are well aerated;
  • are well drained; and
  • have good water holding capacity.

Sufficient depth allows the roots grow deeply, which means the roods can uptake water and nutrients well. Well-aerated and well-drained soils can avoid deficiency of oxygen and an attack by root-rotting organisms arising from waterlogging of the rootzone, supplying appropriate moisture to the roots at the same time

A range of soil types from sandy loams through to loamy clays provides these conditions.

Clare Valley has similar soils structure to Coonawarra, which is famous for its “Terra rossa (Italian for “Red soils”).” The red soil is formed through iron-oxide process in the clays. The structure of the soils in the both regions is red soil over a limestone base which is well-drained, while maintaining adequate soil moisture to roots and readily allows roots to penetrate in search of water.

In summary, the Clare Valley has the ideal soil structure for grapevine.

  • 十分な深さを持つこと(土壌の浸透性が高いこと);
  • 高い通気性;

Clare Valley No.2 - Climate

Arguably the Clare Valley is one of the Australia's finest wine regions to produce Riesling wine. Today, I want to talk about the climate suitable for growing good Riesling grapes.

The important attributes of the fine Riesling are flora aroma, crispness, refreshing taste, high acidity, well balance between acidity and sweetness, low to medium alcohol content (about 12.5%). It is often said that such a fine Riesling is produced in cool climatic regions. I will go into climatic factors, in particular temperature, which have a critical effect on the quality of the grape such as the level of sugar and acidity, and the intensity and complexity of flavour and aroma.

Sugar in grape berries is converted into alcohol by enzymes during the fermentation, and as such the sugar level in the grape berries generally indicates the alcohol level of the wine. Once the sugar concentration in the grape berries has reached the sugar level equivalent to the alcohol level which a winemaker wishes for the wine, it would be the timing of harvesting. Sugar accumulates over the course of berries development. During the grape berry ripening, higher temperature condition facilitates photosynthesis because enzymes involved in sugar production becomes more active in high temperature. Therefore, in warm/hot climatic regions, the sugar level in the grape berries reaches the winemaker's desired level earlier than in cool regions.

Next consideration is acidity. Temperature plays an important role in keeping the acidity of the berry. Acidity increases until the veraison and then it decreases. On the contrary to the sugar accumulation, the acidity is reduced greater in high temperature due to the more respiration than in low temperature.

Lastly, accumulation of flavour and aroma compounds generally mature toward the end of ripening process. It takes long times for those compounds to be optimal maturity. In general, the period required for those compounds to be optimal does not link to the temperature. In other words, high temperature does not mean flavour and aroma mature fast.

Consequently, in warm/hot region, sugar level is likely to become high enough for the grape berries to be harvested earlier, at which acidity may have been lost too much and flavour and aroma concentration may be far from optimal maturation. In cool climate, however, due to the lower temperature, sugar concentration is more slowly, leading to retaining desirable acidity level. Furthermore, as it takes long time for sugar content to be proper level for harvest, flavour and aroma are likely to mature well. It is considered that flavour and aroma maturity and final sugar accumulation can be roughly synchronous in cool regions.

Many vineyards in the Clare Valley are found on slopes between 450 and 500m of elevation. As you know, the temperature will fall by 0.7°C for every 100m increase in elevation and thus, the climate of the Clare Valley is the cool climate. As I explained above, grapes grown in the Clare Valley keep high acidity and have optimal flavour and aroma.

On the last day of November, I first visited Clare Valley with friends, which I had been waited for.

I want to report what I saw there by four posts: general impression, climate, soils and cellar door service experiences.

Today, I want to talk about the general description of and my impression on the Clare Valley.

Clare Valley is a small wine region locating 1.5-hour by car to the north of Adelaide. The history of wine making in the Clare Valley is long. The first vineyards were planted in the 1840s. Until the 1960s, the main products were dried grapes and fortified wine, but since then, most planting have been made for table wine.  The vineyard area is currently 4,600 ha grown by 216 grape growers and the main varieties are Shriaz, Cabernet Sauvignon, Riesling, Chardonnay and Merlot. The number of wineries is around 40, most of which are small and medium size.

Most vineyards lie on slopes 450 to 500m in elevation. Due to the high elevation, Clare Valley is categorised into the cool region.  The climate is similar to the more elevated part of the Barossa Valley and the Eden Valley. Soils are mostly sandy loam to loam, over red or brown clayey sub-soils.

The landscape of the Clare Valley is significantly different to that of the Barossa Valley. The plain field is very narrow and lie north and south surrounded by hills. Such geographical characteristic give an impression of isolated, hidden area. On the contrary, my image on the Barossa Valley is vast plain, not the image of valley.

There were definitely fewer visitors in the Clare Valley than the Barrosa Valley, which was quite good because we could relax and enjoy the conversation with cellar door staffs. I like the Clare's  less commercial, calm and warm atmosphere.

We visited four cellar doors, Crabtree, Kilikanoon, Jim Barry and Sevenhill, of which Crabtree and Kilikanoon are the most impressive. Crabtree is very small like a living room. A lady explained very politely and gently, and the quality of the wines, particularly Riesling and fortified, was superb. At Kilikanoon, we had perfect hospitality. Cellar door staff's cheerful and precise explanation of tasting note was very helpful for understanding the Kilikanoon winery. I found the staff the most important factor for cellar door experience. I want to go into this issue later.

Clare Valley Riesling and the story of cork

It has been so hot today and a chilled white wine is perfect for such a hot day. We had a Jim Barry's Watervale Riesling (Clare Valley) at dinner. I won't go into the tasting comment; it was really good with refreshing and crisp taste for the price.

According to 'The World Atlas of Wine,' Producers in Clare Valley were the first in Australia to agree to move to screw caps to preserve the steely purity of their Riesling. It is interesting to know such a trivium. The major sensory characteristic of the Clare Valley Riesling is its high and crisp acidity, which distinguish the wine from other regions' Riesling. Therefore, to preserve the acidity as much as possible, they were encouraged to adopt screw caps. Their decision was quite reasonable, I think.

In Japan, many people think wine is closed with a cork, although it depends on the selections of shops. However, Australian wine are almost all closed with screw caps. Corky taints rarely happen with wine with screw caps. In Japan, many consumers tend to think that screw-cap wine is non-premium/daily wine and wine with cork is premium wine/excellent wine, but such idea should be abandoned. The question is whether it keeps the quality of the wine or not.

Jim Barry is named as one of the best Riesling producers in the region in the book. I am going to visit them in the near future.

The World Atlas of Wineによれば、クレアバレーのワイン生産者は、品質保持のためオーストラリアで最初にスクリューキュップへの移行に同意した地域とのこと。

The World Atlas of Wine

Exam and wine

I have two exams this week and finished the first one today. The second exam is Thursday and as such, I should study tonight. However, I would like to drink wine tonight as half of my stress has gone. 'Do not do today what you can do tomorrow,' let's drink wine now and study tomorrow.

Glühwein

Christmas is approaching. I will spend my first Christmas in the southern hemisphere. For Australian, Christmas in summer is usual, but for those who was born and grew up in the northern hemisphere, it may seem a little strange. Anyway, I want to enjoy the Christmas here in Adelaide.

I remember drinking an interesting wine in Christmas season in Germany. It is Glühwein (Mulled wine in English). It is a hot red wine, cooked with spices such as cinnamon sticks and clove, sugar, orange peel. It is hot, so good for a drink in winter. I do not know if there is such custom in Australia. Whether it is delicious or not, it is something interesting to drink, Why not Glühwein?

Alsace

Alsace is the famous wine region in France. It is so beautiful as Mosel region in Germany which I talked in my first post and worth visiting. I have been there before and would like to visit again. Today, I want to show nice pictures when I visited there in 2007.

McLaren Vale is close to Adeleide and it takes only 45 minutes from our apartment to go there, and as such, I often visit wineries in McLaren Vale.

'DADD' by d'Arenberg in MacLaren Vale is my favorite sparking wine. I tasted it at the cellar door and bought it as I thought it was very good quality under $30.

Mr Osborn, who is a chief winemaker of the d'Arenberg winery, talks about the wine including why the name is DADD in YouTube.  I like this warm sense of naming which is not seen in Europe.

Takahata winery

Takahata winery is one of the famous wineries in Japan located in Yamagata Prefecture. The winery is good to visit as the visitors can see the production line there. I recommend visiting. I like the winery's sparkling wines. It's good considering the price.

Yalumba

I remember drinking Yalumba's Signature 3 years ago when I stayed in Kyoto on business. I can clearly remember its high intensity of dark cherry taste. Since then, the taste of Yalumba represented my image of Australian wine until I came to Adelaide. Now, with many tasting of wine from various regions and tasting of of various styles, my image of Australian wine has become diverse dramatically.

My first visit to Yalumba was excellent. A cellar door staff was very attentive, and has deep and wide knowledge of their product. A large counter, nice building and interior, good staffs and good wine, every important factor of a cellar door was there. With such a nice experience, Yalumba has become a reliable brand for me.

Wolf Blass No.2, Food paring

I had Wolf Blass Yellow Lable Riesling last night. I found the wine good cost-effectiveness as we enjoyed this medium bodied, fruit-driven such as lemon and lime wine by paying only $14. It matched yesterday's dinner, pasta, ratatouille and smoke salmon quite well.
