Food and wine pairing No.1 料理とワイン その1

It is difficult to come up with the best combination of food and wine due to the diversity of personal preferences. There is no strict rule for food and wine paring.

However, there is a general guideline: match the intensity of foods with the weight of the wine. The weight of wine is indicated by the level of alcohol content.

For example, matching the high intensity of food such as grilled beef steaks with full bodied wine such as full bodied Shiraz is a good combination.
   
What wine do you think match raw fish such as sushi well?  The picture below is a sushi at Sushi-Tetsu, in Shiogama, Miyagi prefecture in Japan. The chef is considered to be one of the best chefs of tuna sushi in Japan. I had the sushi in Oct 2013 and it was really tasty, although I matched the sushi with a local Sake, "Uragasumi."



The flavour intensity of raw fish is weak and delicate; thus, one suggestion is light-bodied dry Riesling, Sauvignon Blanc and Koshu (Japanese local grape variety).

Other consideration for the raw fish is the oily texture of the raw fish matches the high acid characteristic of those white wines.  


料理とワインの組み合わせは個人の好みの問題もあり、ベストの組み合わせを提案するのは難しいのですが、一般的なガイドラインがあります。それは食べ物の味の強さとワインのボディの強さ(一般的にはアルコール度数)を合わせるという方法です。例えば、味が強いグリルしたビーフには、フルボディのシラーズは良い組み合わせでしょう。では、寿司に合うワインは何でしょう? 軽めの白ワイン、ドライ・リースリングやソービニョンブランなどは、繊細な寿司の味わいによくマッチするでしょう。また、生魚のオイリーな舌触りが白ワインのすっきりした酸味によりうまくバランスが取れ、心地良く感じられると思います。ちなみに写真は塩釜のすし哲のお寿司。その時は浦霞と合わせました。

Japanese wine 日本のワイン

It is not widely known that there are more than 150 wineries in Japan. Some of the wineries produce really good wine. I visited several wineries in Japan. One of the most famous wineries is Takeda winery, in Yamagata prefecture. Many Japanese wine are expensive due to the high labour costs and lands, but the wines from Takeda wineries are mostly affordable.  I recommend trying Japanese wine and visiting wineries. Visiting the wineries are really enjoyable. In Adelaide, two Japanese wines, which are made from the Japanese local variety Koshu, are available at East End Cellars, although they are expensive. With high acidity and high minerality Koshu matches Japanese foods such as sushi and sashimi well. The pictures were taken in 2013 when I visited Takeda winery.

Why not Japanese wine?

日本にワイナリーが150以上あることはあまり知られていませんが、いくつかのワイナリーは高品質のワインを作っています。その中の一つに山形県の武田ワイナリーがあります。通常日本ワインは労働コストや土地代等の問題で価格が高いのですが、武田ワイナリーのワインは買い易い値段のものがほとんどです。一度日本のワインを飲んでみてはいかがでしょうか。またワイナリーを訪れてみるのもおすすめです。アデレードでもEast End Cellars で、価格は高いですが甲州が2種類だけ販売されています。

                                

                                




Champagne シャンパーニュ

Today's practical session of the sensory study class was Champagne.

I had not been a fan of sparkling wine, even Champagne, but I found the Champagne is really wonderful in Today's session.

We had some of the best sparkling winemakers in Australia in today's session, and they were great. I was able to understand the differences of sensory attributes deriving from various winemaking techniques with their insightful, deep and comprehensive explanation. The wines were carefully chosen by them so that students could tell the differences. I was moved so much by their professionalism and passion.

A genuinely well-structured program such as today's class could move and motivate people. I will make every effort so that I will be able to motivate people in the future whatever I would do in the future.

Today's best for me is Pol Roger Sir Winston Churchill 2002. The wine had high intensity of both refreshing strawberry and citrus fruits, and ageing characters,  rich and creamy texture and high complexity of yeasty character from long-time contact on lee. It was really nice.

The pictures are today's session, and vineyards in Champagne Moet & Chandon, where I visited in 2009. I remember enjoying a very impressive winery tour at Moet & Chandon.


今日の官能評価のクラスの実習はシャンパーニュ。私はこれまでシャンパーニュのファンではありませんでしたが、今日の実習でシャンパーニュの素晴らしさにようやく気付くことができました。今日は、オーストラリアで最も優秀(かつ有名)なスパークリングワイン醸造家が特別講師として解説を行ってくれました。彼らの、洞察力に富み、かつ分かりやすい解説で、醸造技術の違いからくる官能評価上の差異をよく理解することが出来ました。彼らが非常に時間をかけて今日の授業を準備したのがわかり、彼らのプロ意識の高さと情熱には頭が下がりました。よく練られた授業構成で人を感動させ、動機付ける、将来は自分でもそうした仕事ができるように努力していきたいと思います。今日のベストは、Pol Roger Sir Winston Churchill 2002。フルーツと熟成による力強い味わい、イーストを思わせる複雑性、柔らかでクリームな触感、素晴らしかったです。写真は今日の授業風景と2009年に訪れたシャンパーニュ地方とモエ・エ・シャンドンです。モエのワイナリーツアーでは巨大な地下セラーを見せてもらったりして、大変印象的なものでした。

Koala and wine コアラとワイン

It is often said that wine expresses the land where it was made. 

Australia is famous for eucalyptus, foods of Koala, and wine made in Australia sometimes smells eucalyptus.

I took the picture in the suburb of Adelaide.

Why not detect the aroma of the birthplace of the wine?

ワインは作られた土地を表現すると言われます。オーストラリアはコアラが食べるユーカリで有名ですが、オーストラリアのワインは時々、ユーカリの葉の香りがすることがあります。ワインを飲んで、そのワインが生まれた土地の香りを探してみませんか。写真はアデレード郊外で撮った野生のコアラの写真です。


                            

Medoc marathon メドックマラソン

I would like to introduce an interesting marathon. The name of the marathon is Medoc marathon.

What do you associate with "Medoc" and "marathon" ?

You are right. 

This is the marathon in Medoc, Bordeaux, in which participants can run through vineyards and drink wine every 2 km including Chateau Lafit Rothshild instead of water!  I participated in this marathon in 2007, although I was not able to complete.

There is only one rule that you must dress a fancy costume in the marathon.

Why not a marathon enjoying wine?

メドックマラソンについて紹介したいと思います。メドックとマラソン、この言葉から何を連想しますか?そうです。ボルドー・メドック地方で行われるマラソンのことです。このマラソンで参加者はぶどう畑を走り、2km毎に給水所ではなく給ワイン所があり、ワインの試飲ができるのです。あのラフィットも試飲できます。一つだけルールがあり、仮装して走らなければなりません。ワインを楽しみながらマラソンしてみませんか。

Hi

I am a master of wine business student at the university of Adelaide in Australia.

A blog is a good way to introduce enjoyable aspects of wine to people who have not had enjoyable experiences with wine. I want to talk about how wonderful wine is through this blog in English and Japanese assuming many Japanese people will read my blog.

To begin with, I would like to reflect some memorable experiences which led to the turning point of my life.   

Pictures below were taken in Mosel, Germany. My wife and I enjoyed my a fresh, a little sweet Riesling made by a friend of mine running a B&B and a vineyard, looking at the vineyard where the grapes of the wine were grown. 

What a wonderful experience!
